I made the most amazing GF/DF pizza last Friday for the fam, and I blew them (and myself) away.
My hubby avoids nightshades as well as gluten, dairy, and most recently, most meat and shellfish. This makes it just a little difficult to go out to eat, so we make most meals at home. It has been difficult to find good pizza, so I have been on a quest to find a recipe even our daughter loves. 7 year-olds are authentic, so if she gives her thumbs up, I know you’ll like it too.
Amazing Pizza
Vegan, Gluten-Free, Nightshade-Free
Store-bought pizza dough
Vegan pesto
Smoky vegan mozzarella cheese (spreadable)
Avocado oil
Shredded vegan mozzarella cheese
Kalamata olives, sliced into rings
Green onions, diced
Follow the directions for the pizza dough.
Once it is ready to bake, par-bake it in a 400’ oven for 10 minutes.
When finished, remove from the oven and cool slightly for about 5-10 minutes.
Whip some of the spreadable smoked mozzarella cheese with a bit of avocado oil until it reaches a spreadable consistency.
Spread across the slightly cooled crust.
Do the same with the vegan pesto – mix with avocado oil and spread onto the pizza.
Sprinkle the pizza evenly with the olives and onions (or use your toppings of choice).
Sprinkle with the shredded mozzarella cheese.
Bake for another 10 minutes or so until the cheese melts. If needed, broil for a few minutes to reach your perfect level of toasted-ness on the top.
Remove from the oven and let it cool.
Cut it into squares and enjoy.
